Dandelion is familiar to everyone. It is one of the first summer flowers that covers meadows, roadsides and city courtyards with a bright yellow blanket.

Almost all parts of the plant are edible. You can prepare delicious dishes from them, like vitamin salads from fragrant leaves, soups. Leaves can be eaten raw or cooked. Raw leaves have a slightly bitter taste. Various dishes can be decorated with flowers, after cutting off the bitter dark green bracts. Dandelion leaves are harvested in early spring, but before the flower arrow appears from the outlet. The younger they are, the softer and less bitter they are.

From the round buds collected in early spring, you can prepare a side dish. Boil them lightly in water, drain the water, add oil, salt, pepper and lemon juice. This dish tastes a bit like Brussels sprouts.

Dandelion flowers can be used to make dandelion wine. Another recipe using the plant is dandelion flower jam.

Dandelion root is peeled, dried, roasted and used as a coffee substitute.
