Spinach is one of the most popular superfoods in the world. In fact, this beneficial leafy vegetable is a storehouse of great substances and nutrients. Spinach, or Spinacia oleracea, is an annual flowering plant that belongs to the Amaranthaceae family and is native to western and central Asia. It is thought to have appeared in ancient Persia and later was introduced to India and China. Because of its origin, spinach is often called a “Persian Green” in China. The plant is usually about 30 cm long, has alternately arranged and oval or triangular leaves. The largest leaves are usually located at the base and small leaves on the upper half of the stem. The flowers are yellow-green and very small (about 3-4 mm), later they turn into a small, dry, lumpy fruit cluster which contains seeds.
