“If you are cold, tea will warm you;

If you are too heated, it will cool you;

If you are depressed, it will cheer you;

If you are excited, it will calm you”.

William Gladstone

Green tea, or Camelia sinensis, is an evergreen little tree or bush that is native to Southeast and East Asia and Indian subcontinent. Camelia sinensis is grown mainly in tropical and subtropical regions. The plant belongs to the Theaceae family. Its leaves are generally used for making tea. Green, black and oolong types of tea are all produced from the leaves of the same plant but they are processed differently. Black tea is fermented, oolong tea is semifermented and green tea is not fermented at all. Camelia sinensis is a plant that can grow up to 2 m tall. The leaves are about 4-15 cm long. Young leaves are light green and are typically gathered for producing tea. They are rich in theobromine and caffeine. People usually harvest the bud and 2-3 young leaves from each plant and process them within two hours after picking so as to avoid fermentation. They repeat this procedure every week. Older leaves are dark green and have a different chemical composition in comparison with young leaves. The flowers are yellow or white with 7-8 petals.
